Janna HowleyKeymasterI am pursuing a Masters in Brewing Science through Auburn University and part of the curriculum is to complete a practicum. The following excerpts are objectives and examples of projects from the Practicum Booklet provided by the university.
During the practicum each student will undertake an industry-based project. Some examples of industry projects are provided below.
- Review the brewey’s business plan and compare with others with recommendations on change
- Review their approach to sustainability and in particular waste management
- Development of a Standard Operating Procedures (SOP) manual
- Development of recruitment and training manual with SOPs included
- Customer evaluation methods employed by the particular establishment.
- A study of the customer/supplier interface and the role of customer care / evaluation programs.
- Capacity management strategies employed by the establishment.
- The level of computerization and related systems.
- Current issues affecting the marketing of the business.
- Orientation, training and development practices.
- Internal auditing.
- Quality control and assurance systems.
- Create a tracking system to follow ingredients through the brewery to the final beer.
- Create a “yeast lab” where yeast strain type and health are assessed and a variety of yeast strains are banked and expanded.
- Identify a quality problem with a beer, identify the cause of that problem, implement a resolution for the problem and then evaluate the success of that over time.
